"Spice this up even further by adding 1 teaspoon each nutmeg and allspice, and 1/4 teaspoon white pepper. You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps.   • 1 cup nonfat dry milk powder
  • 1 cup non-dairy powdered coffee creamer
  • 1 cup french vanilla-flavored non-dairy powdered coffee creamer
  • 2 12 cups white sugar
  • 1 12 cups unsweetened instant tea
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cardamom

  • In a large bowl, combine milk powder, non-dairy creamer, vanilla flavored creamer, sugar and instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder.
  • To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water.
  • Store dry mixture in an airtight container.

  1. This is pretty darn good! The only other chai I'd ever had the first time I made this, was the Tazo liquid concentrate. This is almost as good (why I gave it 4 instead of 5 stars). I made some minor changes on my second batch - 1 1/2 cups creamer and 1/2 cup French Vanilla Creamer (I'm not real fond of vanilla) instead of 1 and 1, 1/2 tsp white pepper instead of 1/4 tsp. I used pumpkin pie spice (as I saw recommended elsewhere), and - most important - I added 1/4 cup cocoa powder. Voila! Mocha Chai!

  2. I had Chai at the bakery/coffee shop down the street from me, and I was hooked. I wanted to be able to make it myself (budgets, you know). This mix is just terrific! Just the flavor I was looking for. I made 1/4 of a batch just to check the flavor without a huge investment. It was just what I was looking for. Even hubby (who hadn't had chai before) loved it. Thanks!

  3. This is amazingly good. I received some as a Christmas present and have now made my own batch. I thought it seemed a bit weak for my tastes and so I added a tsp of allspice, 1/2 a tsp of white pepper and an additional 1/4 cup of instant tea. I also used splenda in place of the sugar and non fat creamers. Thank you for posting this.

I didn't have cardamom and wanted a bit of a kick, so, I used the nutmeg and substituted allspice for cardamom. I'm debating whether or not to add pepper. My dad liked it the way it was and he has no idea what he's drinking.We don't have a food processor; so, I used the blender. It works okay, but I think that a food processor or a coffee grinder would be better suited to making the mixture especially powedery.
