A drinking vinegar, or shrub, is not a beverage most think about. In fact, many gag at the thought of a drinking vinegar. But this fermented beverage is above and beyond a shot of raw apple cider vinegar. And in truth, shrubs make excellent co*cktails and even better mocktails.

What is a Shrub

Drinking vinegars have been around for centuries, dating back far as the 17th century. Today, in the modern world, shrubs are not a popular drink to serve. As far as fermented drinks are concerned, kombucha is still at the top of the list. However, shrubs are slowly making the climb to the top.

Shrubs consist of three ingredients: fruit, sugar, and raw apple cider vinegar. The combination of the 3 ingredients creates a fruity, vinegary simple syrup which contains natural probiotics.

What ingredient combination makes for a good shrub? Anything and everything. There is no set recipe for creating a drinking vinegar. Aside from the basic fruit, sugar, and raw apple cider vinegar, herbs and spices can be added to create a heartier syrup.

Drinking Vinegar for All Ages

A delicious mocktail consists of a splash of shrub syrup mixed together with either water, sparkling water, or club soda. The kids love it, and it is much better alternative to soda pop.

However, for those who like to dabble in a co*cktail every now and then you’ve come to the right place. This particular peach shrub recipe partners quite well with vodka and ginger beer. But don’t discredit drinking the shrub as is, it is truly that good!

The type of alcohol used to make an alcoholic beverage is based on preference. Feel free to mix in a bit of club soda, sparkling water, and even ginger beer.

Unlike the items mentioned above, citrus juices do not mix well with shrubs. The acidity in the citrus offsets the acidity in the raw apple cider vinegar, creating an odd flavor. It is not a horrible flavor, simply odd enough to not try the mixture again.

Peach Shrub Recipe

Have fun with making shrubs, and by all means, be creative in selecting the combination of ingredients!

Ingredients

  • 6 cups peaches, pitted and chopped
  • 3 cups organic granulated sugar
  • 3 cups raw apple cider vinegar

Old Fashioned Peach Cobbler Recipe

Instructions

  1. Add chopped peaches and organic sugar to the gallon glass jar.
  2. Smash peaches with the muddler to release the juices. Mix peaches and sugar.
  3. Add jar lid and store in the refrigerator for 2 days. During this time swirl jar to continue mixing the peach juice and sugar.
  4. Once the sugar has dissolved add the vinegar. Mix well and return to refrigerator for an additional 5 day. During this time continue to swirl the jar, mixing the sweet juice and raw apple cider vinegar.
  5. Strain out fruit using a fine mesh sieve. Pour strained liquid into clean quart or half gallon Mason jars.

Notes

The drinking vinegar will last months in the refrigerator. Drink as is or dilute with water. To create a carbonated drink add sparkling water or club soda. Shrubs are often used to make co*cktails, experiment with flavors to create your favorite.

Follow these easy steps for making a peach shrub, a delightful drinking vinegar. This shrub recipe is easy to make consisting of three simple ingredients.
