It's almost summer holidays here for the kids and then they are off for two whole months - yikes!!

I have literally been rushing around like crazy trying to get as much as I can organized before they break up.

With a movie date planned with my son to see the new Transformers movie once he got home from school. I wanted a nice quick and easy lunch to enjoy.

I was really craving a Ham and cheese toastie, but with my Healthy Extra b already used up, that would mean using a hefty amount of calories on some bread, which I really didn't want to have to do.

It was then I spotted our waffle maker. I'd been making waffles earlier for the kids and hadn't yet put it away. So figured it would be perfect for making something quick for lunch.

I have an amazing Cuisinart Waffle Maker with interchangeable plates so you can make pancakes too. It's awesome, but unfortunately not available in the UK.

But thisAndrew James Belgian Waffle Makeron Amazonis very similar.

I prefer a square waffle shape maker, as then it is more like a sandwich. Perfect!!

However, This will work in any type waffle maker, just be aware that quanity's of ingredients may need to vary.

One thing I do recommend is a waffle maker that has an adjustable temperature, because for things like these hash brown waffles, you need a high temp.

But for something like these Belgian Waffles a lower temp, so you can see how this can be a useful feature.

At first, I was going to make a stuffed omelette, but really wanted something more starchy and filling.

I have cooked hash brown waffles before using the waffle iron, using just potato, or a mixture of white and sweet potato, or even vegetables like zucchini etc but still craving that darn ham and cheese toastie, I was going one step further today and stuffing it with ham and cheese which was pretty darn clever as it was seriously yummy.

You can just imagine the amount of ideas floating around in my head now for some other variations.

I already have these amazing crispy golden hash browns,which is the best method for crispy hash browns in my opinion.

But being slightly rushed for time today, I did a quicker method for this Ham and Cheese Stuffed Hash Brown Waffle.

Instead - I just grated a floury type potato like a russset variety, squeezed out excess moisture, added one egg, some sea salt and black pepper.

The first time I made these Ham and Cheese Stuffed Hash Brown Waffles , I added half the mixture to the waffle iron, the added Half the cheese. Then added some slices of ham, before add the remaining cheese and the other half of grated potato. But the cheese kind of sinks into the potato and although delicious, it didn't have the melty oozy cheese I wanted.

So next time I made a Cheese and Ham Stuffed Hash Brown Waffle, I cooked the hash brown waffles first, and then add the fillings to the top of two of the waffles, using just cheddar for the cheese this time round and sandwiched the hash browns together before closing the waffle iron again, until the cheese was melted. Pure Perfection!! and seriously yummy.

We enjoyed these Cheese and Ham Stuffed Hash Brown Waffles for lunch, so I just served with a mixed salad and some ketchup, because anything cheesy just has to have ketchup for dunking, right? You could even make your own Ketchup.

Cheese and Ham Stuffed Hash Brown Waffle

Yield: 2 servings

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

This recipe is gluten free, Slimming and Weight Watchers friendly

Ingredients

  • 600g of floury potato (like russets), grated and squeezed of excess liquid.
  • 1 egg, beaten
  • salt and black pepper
  • spray oil
  • 6 slices of ham
  • 60g (2oz) of cheddar, grated

Instructions

  1. Heat waffle iron at highest heat.
  2. Add grated potato to a bowl.
  3. Add the beaten egg, season well with salt and black pepper and mix to combine.
  4. Once waffle iron is heated, spray with spray oil and add the potato equally to each section of the waffle iron. (It may vary in quantity depending on what waffle iron you have)
  5. Close waffle iron, pushing down firmly and cook until golden approx 8-10 minutes.
  6. Open waffle iron once golden, add ham to the top of two of the waffles, then top with the cheddar..
  7. Using a spatula, carefully lift the other two waffles so it forms a kind of hash brown sandwich.
  8. Close back down the waffle iron for a few mins until cheese is all melted.
  9. Carefully remove the stuffed waffles from the waffle iron and serve with your choice of sides. Delish!!
